Sake with Moderate Umami. Sagan Hiyaoroshi.

In cold winter, a sip of nicely warmed up hiyaoroshi style sake brings you blissful time.

“Sagan, a hiyaoroshi of a brewery in Kanagawa prefecture can be a nice partner to warm up your frozen body.” I asked for a staff at a liquor shop to suggest me a good sake with a little warm temperature, and immediately he recommended this to me. OK, let’s trust him.

Unfortunately I couldn’t find the brewery’s web page in English, but found that they can offer a brewery tour in English. If you want it, contact him at least one month before the date you want to make a visit.

How Does it Taste?

When having it warmed, umami & sour scent rises together with the smell of evaporating alcohol. Its taste is very gentle and mild. I could feel a little sweetness and sourness. Thus Sagan is good to drink when eating.

I warmed it up a little and enjoyed with “Osechi”, a new year cuisine. It was really a blissful time to welcome the new year with nice food and sake.
